Chef Simos Aikaterinis, hailing from Vrontados, Chios, shares his story on “Fair Winds and Following Seas,” recounting: “My father was a landman, but all four of his sons followed the sea and the ships. I first embarked at the age of 15, alongside my younger brother, on the ‘M/V BYZANTINOS MONARCH’ on 11-2-1968, sailing from Japan. The ship was a 12,000-ton freighter, and we were carrying phosphate for Mexico.“
“Today, I’d cook a hearty dish of meat and rice, tas kebab, with carrots and sauce,” Simos tells us. “Young people should develop a true love for the sea before deciding to embark on a voyage. They must approach it seriously—stay focused, have a solid understanding of English, follow a well-structured plan, and keep themselves informed about the shipping industry and its latest developments,” he advises.
