Bread is a baked food product made from water, flour, and often yeast. Throughout recorded history and around the world, it has been an important part of many cultures’ diets. And it has also been an important part of Greek song, as bread appears regularly as a symbol of welfare and justice, signalling the vision for a better world. From the Katsimiha brothers, Nikos Ziogalas and their “working for a piece of bread” to Mikis and his “sweet bread”, from Stelios’ “most bitter bread” to the bread distributed by Giannis Glezos’ revolutionary leader Emiliano Zapata, this is Greek music as a realm of protest and social consciousness.
